Modern gastronomy # 2

  • Pickled and slow-baked filet of codfish with butter steamed celeriac, Jerusalem artichoke and carrot

  • Grilled king crab with vegetables in tempura

  • Veal tenderloin with mushrooms, seasonal vegetables and broken potatoes with creamy rillette of cured breast of veal

  • White chocolate crème brûlée, Florentine pipe and sorbet.

Classic gastronomy

  • Steamed halibut with whey fermentet white asparagus, steamed mussels and served with foamy mussels broth and truffle caviar

  • Tenderaged Danish rack of beef with red wine sauce mushrooms and seasonal vegetables

  • Creamy icelandic ‘skyr’ with crunch and licorice

  • Mandelkage med pistacienødder, chokoladesauce og nougatis med espresso-kaffe

Nordic menu

  • Smoked, small potatoes with mayo, radish and cress

  • Smoked salmon from the island of Fanoe with smoked cream of fresh cheese and chives from Fuhnen.

  • Crispy kale and cabbage salad with green asparagus, norwegian lobster tails, herbs and a delicious ‘beer-bisque’

  • Braised veal cheeks with root vegetables and rustic mashed potatoes with dried cranberries, parsley and melted butter

  • Red fruit stew with 'cold bowl ice cream' and burnt white chocolate

Fish & shellfish

After all, it is not cheap to go to the fishmonger ... but an easy way to save money is to buy whole fish and cut them out - it's approx. half price. But then what...? Don't worry - we'll teach you how deal with all kinds of fish in this menu

  • Pickled scallop with butter steamed celeriac, Jerusalem artichoke, hazelnuts and carrot

  • Octopus flambè et sous vide 

  • Baked cod with herbs, pancetta and mustard cream, horseradish as well as light smoked cod roe

  • Fried halibut with fennel risotto and grilled king crab 

  • Chocolate Crème Brûllée with walnut cake and sorbet

Price pr. person

DKK 1.150,- till 1.375,-  excl. VAT

It takes min. 12 people to make a team. Prices are incl. set of recipes, all raw materials, beer, wine and lemonade, rent of school, dishwashing and cleaning.


Beverages

We serve our house wine, beer and lemonade while cooking. Selected wines are served with most menus. The beverages are not served as an all-you-can drink concept but in a reasonable quantity. 

Additional beverages can be purchased at very reasonable prices.


Our premises are perfect for teambuilding or a cooking class with customers. 

The best materials
The kitchen is super exclusively decorated with the best appliances from Gaggenau and Neff and fitted with Quooker Twin Tab in all sinks. The tables are in Corian and American oak and the cooking is taking place on the 4.5 m long and 1.6 m wide cooking island.

The best equipment
The kitchen utensils are all the best from Kitchen Aid, Magimix and Mauviel, among others. The plates are, of course, the beautiful and classic French plates from Pillivuyt accompanied by Italian Bormioli glass. With our high quality facilities and equipment we can provide the perfect setting for private dining or company teambuilding.
